Ingredients

  • 1 lb large (21/25 count) or jumbo (16/20 count) shrimp, peeled, deveined, tails on or off
  • 810 strips regular-cut bacon, cut in half crosswise
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh parsley or chives, chopped, for garnish
  • Wooden skewers (soaked for 30 minutes) or metal skewers

Instructions

  • 1. Prepare Shrimp & Bacon: Pat shrimp very dry with paper towels. Cut bacon strips in half.
  • 2. Make Marinade: In a bowl, whisk olive oil, lemon juice, minced garlic, Dijon mustard, smoked paprika, cayenne (if using), salt, and pepper. Add shrimp, toss to coat, and marinate for 15-30 minutes in the refrigerator.
  • 3. Assemble Skewers: Preheat oven to 400°F (200°C). Line a baking sheet. Wrap each shrimp with a piece of bacon and thread onto skewers, leaving a small space between each shrimp.
  • 4. Bake: Arrange skewers on the baking sheet. Bake for 12-18 minutes, or until bacon is crispy and shrimp are opaque pink. Broil for 1-2 minutes for extra crispness, watching closely.
