Ingredients
- 2 lbs (approx. 900g) cherry or grape tomatoes
- 4–6 cloves garlic, peeled
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup fresh basil leaves, roughly chopped
- 2 tablespoons fresh oregano leaves, roughly chopped
- Optional: Pinch of red pepper flakes, splash of balsamic vinegar
Instructions
- 1. Prep & Season: Preheat oven to 400°F (200°C). On a large baking sheet, spread cherry tomatoes and peeled garlic cloves. Drizzle with olive oil, salt, and pepper. Toss to coat.
- 2. Roast: Roast for 25-35 minutes, or until tomatoes are burst, shriveled, and slightly caramelized.
- 3. Blend: Transfer roasted tomatoes, garlic, pan juices, and half of the fresh herbs to a blender. Blend until smooth or desired consistency.
- 4. Finish: Pour sauce into a saucepan. Stir in remaining fresh herbs. Taste and adjust seasoning as needed. Simmer gently for 5-10 minutes to meld flavors. Serve warm.
