  • 4 cups cubed fresh pineapple
  • 2 tablespoons fresh lime juice (from 12 limes)
  • 1/4 cup fresh mint leaves, chopped (or to taste, optional)
  • 12 tablespoons honey or agave nectar (optional, for sweetness)
  • Pinch of sea salt (optional, enhances sweetness)

Instructions

  • Step 1: Prepare the Fruit. Cut watermelon and pineapple into approximately 1-inch cubes. For the best flavor and texture, aim for uniform pieces.
  • Step 2: Chill. Place the cubed fruit in a large mixing bowl. Cover and refrigerate for at least 30 minutes, or up to 2 hours, to allow it to get thoroughly chilled.
  • Step 3: Assemble the Salad. Remove the chilled fruit from the refrigerator. Add fresh lime juice, chopped mint (if using), and optional honey or agave nectar. Gently toss all ingredients together until well combined. Taste and adjust sweetness or tartness as desired.
