Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup shredded sweetened coconut
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing on low speed until just combined.
