Ingredients
- 1/2 to 3/4 cup fresh lime juice (from 4–6 limes)
- 1 can (13.5 oz / 400ml) full-fat coconut milk
- 1.5 cups cold water
- 1/4 to 1/2 cup granulated sugar (or honey, agave syrup), to taste
- Ice, for serving
- Lime slices or mint sprigs, for garnish (optional)
Instructions
- Prep Your Limes and Coconut Milk: Juice the fresh limes. If coconut milk has separated, stir or shake the can well to re-incorporate.
- Combine Ingredients: In a pitcher or blender, combine the fresh lime juice, coconut milk, and cold water. Stir or blend until smooth.
- Sweeten to Taste: Add sugar (or chosen sweetener) gradually, starting with 1/4 cup. Stir, taste, and add more until desired sweetness is reached, typically up to 1/2 cup.
- Chill and Serve: Refrigerate the drink for at least 30 minutes, or until thoroughly chilled. Serve over plenty of ice, garnished with a lime slice or mint.
