Ingredients
- 1 cup (240g) natural creamy peanut butter (just peanuts and salt)
- 1/2 cup (120ml) pure maple syrup or honey
- 1 large egg (or 1 flax egg for vegan)
- 1 teaspoon vanilla extract
- 1 1/2 cups (135g) old-fashioned rolled oats (gluten-free if needed)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/4 – 1/2 cup mini chocolate chips, chopped nuts, or seeds
Instructions
- Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix Wet Ingredients: In a large bowl, combine the peanut butter, maple syrup (or honey), egg, and vanilla extract. Whisk until completely smooth and well-combined.
- Add Dry Ingredients: Stir in the rolled oats, baking soda, and salt until just combined. If using, fold in optional add-ins like chocolate chips. Do not overmix.
- Form Cookies: Scoop rounded tablespoons of dough and roll into balls. Place on the prepared baking sheet, then flatten each with a fork in a crisscross pattern.
- Bake: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are just set.
