Ingredients
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ¼ cups buttermilk
- ¼ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- Butter or oil for griddle
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined and aerated.
- In a separate medium bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or rubber spatula until just combined. Do not overmix; a few lumps are okay. Let the batter rest for 5-10 minutes.
- Preheat a griddle or non-stick pan over medium heat. Lightly grease with butter or oil if needed.
- Pour about ¼ cup of batter per flapjack onto the hot griddle. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface.
