Description

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Butter or oil for griddle

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined and aerated.
  • In a separate medium bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or rubber spatula until just combined. Do not overmix; a few lumps are okay. Let the batter rest for 5-10 minutes.
  • Preheat a griddle or non-stick pan over medium heat. Lightly grease with butter or oil if needed.
  • Pour about ¼ cup of batter per flapjack onto the hot griddle. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface.
