Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 8 oz cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons heavy cream (optional)
Instructions
- For the Cookies: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. In a large bowl, cream together 1 cup softened butter and granulated sugar until light and fluffy. Beat in the egg and 1 tsp vanilla extract. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry ingredients to wet, mixing until just combined.
- Drop rounded tablespoonfuls of dough onto prepared baking sheets. Bake for 9-11 minutes until edges are lightly golden. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese and ½ cup softened butter until smooth and creamy. Gradually add powdered sugar, mixing until fully incorporated. Beat in 1 tsp vanilla extract. If the frosting is too thick, add heavy cream 1 tablespoon at a time until desired consistency.
- Assemble the Cream Pie Cookies: Once cookies are completely cool, spread or pipe a generous amount of cream cheese filling onto the flat side of one cookie. Top with another cookie, gently pressing to form a sandwich. Repeat with remaining cookies and filling.
- Store assembled cream pie cookies in an airtight container in the refrigerator.
