Ingredients
- 1 cup (226g) unsalted butter, room temperature
- ¾ cup (150g) granulated sugar
- ¾ cup (165g) light brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp pure vanilla extract
- 2 ½ cups (300g) all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ½ cup (128g) smooth cookie butter
- Optional: ½ cup chocolate chips or crushed Biscoff cookies
Instructions
- Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet, mixing on low speed until just combined. Do not overmix.
- Gently fold in the cookie butter until marbled throughout. If using, fold in optional mix-ins.
- Scoop dough into 1.5-2 tablespoon balls and chill on baking sheets for at least 30 minutes.
