Ingredients
- 1/2 cup (113g) unsalted butter, melted (or coconut oil)
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup (56g) coconut flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup optional add-ins (chocolate chips, shredded coconut, chopped nuts)
Instructions
- Preheat Oven & Prepare Sheet: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk together melted butter, granulated sugar, eggs, and vanilla extract until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk coconut flour, baking powder, and salt.
- Combine & Rest: Add dry ingredients to wet, mix until just combined. Let dough rest for 5-10 minutes.
- Form & Bake: Scoop dough onto baking sheet. Bake 10-14 minutes, until edges are lightly golden.
- Cool: Let cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.
