- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- Optional: 1/4 cup chopped nuts, seeds, or dried fruit
- Optional: 2 tbsp melted chocolate for drizzling
Instructions
- Cook quinoa according to package directions; cool completely.
- Melt coconut oil gently. Stir in nut butter, maple syrup, and vanilla until smooth.
- Whisk in cocoa powder until no clumps remain. Fold in cooled quinoa and optional add-ins.
- Press mixture firmly onto a parchment-lined baking sheet, 1/4 to 1/2 inch thick.
- Chill in the refrigerator for 1-2 hours until firm.
