These amazing chickpea cookies are secretly healthy and incredibly delicious. They’re wonderfully chewy, packed with chocolate chips, and surprisingly easy to make.
Ingredients
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/2 cup creamy nut butter (peanut, almond, or cashew)
- 1/4 cup maple syrup (or agave/honey)
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (your favorite kind)
Instructions
- Step 1: Prepare Chickpeas. Rinse and drain chickpeas thoroughly. Process in a food processor until very smooth and paste-like.
- Step 2: Combine Wet Ingredients. Add nut butter, maple syrup, vanilla extract, baking soda, and salt to the food processor. Process until completely smooth and well combined.
- Step 3: Fold in Chocolate Chips. Transfer mixture to a bowl. Gently fold in chocolate chips by hand until just evenly distributed.
- Step 4: Scoop and Bake. Preheat oven to 350°F (175°C). Scoop dough onto a parchment-lined baking sheet, flatten slightly, and bake for 12-15 minutes until edges are lightly golden.
