This easy-bake recipe transforms sweet cherry tomatoes into a rich, vibrant spaghetti sauce. The roasting process intensifies their flavor, creating a delightful and fresh homemade meal.
Ingredients
- 2 lbs (about 900g) cherry or grape tomatoes
- 6–8 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 teaspoon dried oregano (or 1 tbsp fresh)
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1 teaspoon sea salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1/4 cup fresh basil leaves, torn or chopped
- 1 tablespoon balsamic vinegar (optional)
- Cooked spaghetti, for serving
- Freshly grated Parmesan cheese, for serving
Instructions
- 1. Prep & Preheat: Preheat oven to 400°F (200°C). Wash tomatoes and spread them in a single layer on a large rimmed baking sheet. Add sliced garlic.
- 2. Season & Roast: Drizzle generously with olive oil. Season with dried oregano, red pepper flakes (if using), salt, and pepper. Toss to coat. Roast for 25-35 minutes, until tomatoes soften, burst, and caramelize.
- 3. Finish the Sauce: Transfer roasted tomatoes and juices to a large skillet. Add fresh basil. Gently crush some tomatoes with a spoon if you prefer a chunkier sauce. Stir in balsamic vinegar (if using). Simmer for 5-10 minutes.
- 4. Serve: Taste and adjust seasoning. Toss with hot spaghetti, add a drizzle of olive oil, and serve immediately with freshly grated Parmesan cheese.
