Ingredients
- 2 lbs (approx. 4 cups) cherry or grape tomatoes
- 3–4 cloves garlic, thinly sliced or minced
- 1 small yellow onion, finely diced
- 1/4 cup extra virgin olive oil, divided
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- Optional: pinch red pepper flakes, 1 tbsp tomato paste
Instructions
- Preheat oven to 400°F (200°C). Scatter tomatoes on a baking sheet, drizzle with 2 tbsp olive oil, and season with salt and pepper.
- Roast for 20-25 minutes, until burst and caramelized.
- While tomatoes roast, heat remaining 2 tbsp olive oil in a large skillet over medium heat. Sauté onion for 5-7 minutes until soft. Add garlic (and optional red pepper flakes/tomato paste) and cook for 1 minute until fragrant.
- Add roasted tomatoes (with juices) to the skillet. Gently crush tomatoes with a spoon. Simmer on low for 10-15 minutes, allowing flavors to meld.
- Stir in fresh basil. Taste and adjust seasoning with salt and pepper. Serve immediately over cooked spaghetti.
