Description
This vibrant cherry tomato spaghetti sauce is incredibly fresh, quick to make, and bursts with natural sweetness. It’s the perfect weeknight meal that tastes like you spent hours in the kitchen.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 4 cloves garlic, thinly sliced or minced
- ¼ cup extra virgin olive oil
- ½ teaspoon red pepper flakes (or to taste)
- ½ cup fresh basil, chopped
- 2 tablespoons fresh oregano, chopped (or 1 tsp dried)
- Salt and freshly ground black pepper to taste
- 12–16 ounces spaghetti or your favorite pasta
- Reserved pasta water (optional)
Instructions
- Halve all cherry tomatoes and mince or slice garlic.
- Heat olive oil in a large skillet over medium-low heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- Add halved cherry tomatoes to the skillet. Cover and cook for 5-7 minutes, stirring occasionally, until tomatoes soften and burst.
- Uncover and use a potato masher or spoon to gently mash some of the tomatoes for a saucy consistency. Cook for another 5-10 minutes to thicken slightly.
- Remove from heat. Stir in fresh basil and oregano. Season generously with salt and black pepper; taste and adjust.
- Toss immediately with cooked pasta, adding a splash of reserved pasta water if needed, and serve warm.
