Ingredients
- 1 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, to taste)
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/2 cup fresh basil leaves, roughly chopped or torn
Instructions
- Heat olive oil in a large skillet or wide pot over medium heat.
- Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant and lightly golden.
- Add cherry tomatoes, salt, and pepper to the pan. Stir to combine.
- Increase heat to medium-high to bring to a gentle boil, then reduce to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally, until tomatoes have burst and softened.
- Gently crush any remaining unburst tomatoes with the back of a wooden spoon or potato masher for desired texture.
- Remove from heat and stir in fresh basil. Taste and adjust seasoning before serving.
