Ingredients
- 2 pints (approx. 4 cups) fresh cherry or grape tomatoes, halved
- 3 tablespoons extra virgin olive oil
- 1/2 small red onion, finely diced
- 4 cloves garlic, minced or thinly sliced
- 1/4 cup dry red wine OR 1 tsp balsamic vinegar
- 1/4 cup fresh basil leaves, roughly chopped, plus more for garnish
- 1 teaspoon fresh oregano, chopped (or 1/3 tsp dried)
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- Salt and freshly cracked black pepper to taste
- Cooked spaghetti or pasta of choice, for serving
Instructions
- 1. Prepare Tomatoes: Wash and halve all cherry tomatoes. Set aside.
- 2. Sauté Aromatics: Heat olive oil in a large skillet or saucepan over medium heat. Add diced red onion and cook for 3-5 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add halved cherry tomatoes, red pepper flakes (if using), salt, and pepper to the pan. Pour in the red wine or balsamic vinegar and let it reduce for 1 minute. Bring to a gentle simmer, then cover and cook on low for 15-20 minutes, stirring occasionally, until tomatoes have burst and softened.
- 4. Mash and Reduce: Use the back of a spoon or a potato masher to lightly mash the tomatoes to your desired consistency (rustic or slightly smoother). Remove lid and simmer for another 5-10 minutes to reduce and thicken the sauce.
- 5. Finish and Serve: Remove from heat and stir in fresh basil and oregano. Taste and adjust seasonings as needed. Serve immediately over your favorite cooked pasta, garnished with extra fresh basil and Parmesan cheese if desired.
