Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, to taste)
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- Salt, to taste
- Freshly ground black pepper, to taste
- 12–16 oz spaghetti or your favorite pasta
Instructions
- 1. Prepare Ingredients: Wash tomatoes, mince garlic, and chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
- 3. Cook Tomatoes Until Bursting: Add cherry tomatoes to the pan. Increase heat to medium-high and cook, stirring occasionally, for 8-10 minutes until tomatoes soften and burst. Use a spoon to gently smash any un-burst tomatoes.
- 4. Simmer and Reduce: Reduce heat to low and simmer for 5-7 minutes, allowing the sauce to thicken slightly.
- 5. Stir in Fresh Basil: Remove from heat. Stir in chopped fresh basil, salt, and black pepper to taste.
- 6. Serve: Toss immediately with cooked spaghetti and a sprinkle of fresh Parmesan, if desired.
