Ingredients
- 1.5 lbs (about 4 cups) cherry or grape tomatoes, washed
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Salt and freshly ground black pepper to taste
- Optional: Freshly grated Parmesan cheese for serving
- Optional: Cooked spaghetti or your favorite pasta
Instructions
- In a large skillet, heat olive oil over medium-low heat.
- Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant and light golden. Do not burn.
- Add cherry tomatoes to the pan. Increase heat to medium and cook, stirring occasionally, for 8-12 minutes, or until most tomatoes have burst and released their juices. Gently pressing some with a spoon can help.
- Reduce heat to low and simmer for another 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
- Remove from heat, stir in fresh basil.
- Season generously with salt and pepper to taste.
