Ingredients

  • 1.5 lbs (about 4 cups) cherry or grape tomatoes, washed
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil leaves, roughly chopped or torn
  • Salt and freshly ground black pepper to taste
  • Optional: Freshly grated Parmesan cheese for serving
  • Optional: Cooked spaghetti or your favorite pasta

Instructions

  • In a large skillet, heat olive oil over medium-low heat.
  • Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant and light golden. Do not burn.
  • Add cherry tomatoes to the pan. Increase heat to medium and cook, stirring occasionally, for 8-12 minutes, or until most tomatoes have burst and released their juices. Gently pressing some with a spoon can help.
