Ingredients
- 1.5 lbs (about 680g) cherry or grape tomatoes
- 4–5 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly torn or chopped
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt to taste
- Freshly ground black pepper to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- Bring a large pot of salted water to a boil for your pasta.
- While water heats, wash cherry tomatoes and thinly slice garlic.
- In a wide, deep skillet, heat olive oil over medium heat. Add sliced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant and just lightly golden; do not burn.
- Add whole cherry tomatoes to the skillet. Increase heat to medium-high. Cook, stirring occasionally, for 8-10 minutes, or until the tomatoes begin to burst and release their juices. Gently press some of the tomatoes with the back of a spoon to help them break down.
- Reduce heat to low and simmer for another 5-7 minutes, allowing flavors to meld. Season generously with salt and black pepper.
- Meanwhile, cook pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- Remove sauce from heat and stir in the fresh basil leaves.
- Add the drained pasta directly to the sauce. Toss well, adding a splash of reserved pasta water if needed to achieve a saucier consistency.
- Serve immediately with a sprinkle of fresh Parmesan cheese, if desired.
