Ingredients
- 1 lb (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil, roughly chopped, plus more for garnish
- 1/4 cup grated Parmesan cheese (plus more for serving)
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- 1. Prepare Ingredients: Wash tomatoes. Mince garlic. Chop basil and grate Parmesan.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Cover and simmer for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Crush & Thicken: Uncover and gently crush any remaining whole tomatoes with a spoon or potato masher. Simmer uncovered for another 5-10 minutes, allowing sauce to thicken slightly.
- 5. Finish Sauce & Serve: Remove from heat. Stir in chopped basil and half of the Parmesan cheese. Taste and adjust seasoning. Serve immediately over cooked spaghetti, garnished with more fresh basil and Parmesan.
