An incredibly easy and flavorful baked cherry tomato spaghetti sauce recipe that is bursting with sweet and tangy roasted tomato goodness. Perfect for a quick weeknight meal with gourmet taste.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–6 cloves garlic, peeled
- 3 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1 teaspoon sea salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1/4 cup fresh basil leaves, chopped
- Optional: Balsamic glaze, grated Parmesan, crumbled feta for serving
Instructions
- 1. Prep the Tomatoes and Aromatics: Preheat oven to 400°F (200°C). Spread cherry tomatoes and peeled garlic cloves in a single layer on a large baking sheet.
- 2. Season and Drizzle: Drizzle with olive oil, sprinkle with oregano, red pepper flakes (if using), salt, and black pepper. Toss to coat evenly.
- 3. Roast to Perfection: Roast for 25-35 minutes, or until tomatoes are burst, softened, and slightly caramelized.
- 4. Blend (or Mash) for Desired Consistency: Transfer roasted tomatoes and garlic to a heat-proof bowl. Mash with a fork for chunky sauce, or use an immersion blender/stand blender for smoother sauce.
- 5. Combine and Serve: Stir in fresh basil. Taste and adjust seasonings. Serve immediately over cooked spaghetti or your favorite pasta.
