Ingredients
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- 2 lbs (approx. 4 cups) fresh cherry tomatoes
- ½ cup fresh basil, torn or roughly chopped
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or pasta of choice (for serving)
Instructions
- 1. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant, without browning.
- 2. Add Tomatoes and Simmer: Add cherry tomatoes to the pan. Stir, reduce heat to low, cover, and simmer for 10-15 minutes, or until tomatoes soften and burst.
- 3. Burst and Reduce: Uncover. Use a spoon or masher to gently burst remaining tomatoes. Increase heat to medium-low and simmer uncovered for another 10-15 minutes to reduce and thicken slightly.
- 4. Stir in Basil: Remove from heat and stir in the fresh basil.
- 5. Adjust Seasoning: Taste and season generously with salt and pepper. Serve immediately over cooked spaghetti.
