Craft a vibrant, sweet-tart cherry tomato spaghetti sauce bursting with fresh flavor. This simple recipe brings gourmet taste to your table with minimal effort.
Ingredients
- 1.5 lbs (about 4–5 cups) cherry or grape tomatoes, washed and halved
- 4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon kosher salt (or to taste)
- 1/4 teaspoon freshly ground black pepper (or to taste)
- 1/4 teaspoon granulated sugar (optional, to balance acidity)
- 1/4 cup fresh basil leaves, roughly chopped (or 1/2 tsp dried oregano)
- Optional: pinch of red pepper flakes
- Optional: drizzle of balsamic glaze for serving
Instructions
- In a large skillet or wide pot, heat olive oil over medium-low heat. Add minced garlic (and red pepper flakes, if using) and cook for 1-2 minutes until fragrant, being careful not to brown.
- Add halved cherry tomatoes to the pan. Increase heat to medium. Cook for 10-15 minutes, stirring occasionally, until most tomatoes have burst. Gently smash any stubborn tomatoes with the back of a spoon.
- Reduce heat to low. Stir in salt, pepper, and optional sugar. Simmer for another 10-15 minutes, allowing flavors to meld and sauce to thicken slightly. Taste and adjust seasoning as needed.
- Remove from heat. Stir in fresh chopped basil until wilted.
- Serve immediately with your favorite pasta. Optionally, drizzle with balsamic glaze.
