Ingredients
- 1 pint (about 2 cups) fresh cherry tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, chopped (plus more for garnish)
- Salt and freshly ground black pepper to taste
- 1/4 cup grated Parmesan cheese (plus more for serving, optional)
- 12 ounces spaghetti or your preferred pasta
- 1/2 cup reserved pasta water (or more as needed)
Instructions
- 1. Prep Ingredients: Wash cherry tomatoes, mince garlic, and chop fresh basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- 3. Cook Tomatoes: Add cherry tomatoes to the skillet. Cook, stirring occasionally and gently smashing some, for 8-10 minutes until softened and burst.
- 4. Simmer: Reduce heat to low and simmer for 5-7 minutes, allowing flavors to meld.
- 5. Finish Sauce: Remove from heat. Stir in fresh basil, salt, pepper, and optional Parmesan cheese. Taste and adjust seasoning.
- 6. Cook Pasta & Combine: Cook pasta according to package directions, reserving 1/2 cup pasta water. Add drained pasta to the sauce in the skillet. Toss vigorously, adding reserved pasta water as needed, until the pasta is well-coated and glossy. Serve immediately with extra basil and Parmesan.
