Ingredients
- 2 pints (approx. 1.5 lbs) Cherry Tomatoes
- 1/4 cup Extra Virgin Olive Oil
- 4–6 cloves Garlic, minced
- 1/2 cup Fresh Basil, packed, roughly chopped
- 1/2 tsp Red Pepper Flakes (optional)
- 1 tsp Salt (or to taste)
- 1/2 tsp Black Pepper (or to taste)
- 1 small Onion or 2 Shallots, finely diced (optional)
- Pecorino Romano or Parmesan, for serving (optional)
- 1 lb Pasta of choice
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Mince garlic and dice onion/shallot (if using).
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and optional onion/shallot; sauté for 1-2 minutes until fragrant and softened.
- 3. Simmer Tomatoes: Add cherry tomatoes, red pepper flakes (if using), salt, and pepper to the pan. Cook on medium-high until tomatoes burst (8-10 mins). Reduce heat to low, cover partially, and simmer for 10-15 minutes until sauce thickens.
- 4. Finish with Basil: Remove from heat and stir in fresh basil. Taste and adjust seasoning.
- 5. Serve: Toss with your favorite cooked pasta and garnish with optional grated cheese.
