Ingredients
- 1 tbsp extra virgin olive oil
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 lbs (about 4–5 cups) cherry or grape tomatoes
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: pinch of red pepper flakes for heat
Instructions
- 1. Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes. Add minced garlic and optional red pepper flakes, cook for 1 minute until fragrant.
- 2. Add Tomatoes & Season: Add cherry tomatoes to the pan. Season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, until tomatoes begin to burst, about 8-10 minutes.
- 3. Simmer: Reduce heat to low, cover, and simmer for 15-20 minutes, allowing flavors to meld. Gently mash some tomatoes with a spoon for a slightly smoother sauce, or use an immersion blender for a completely smooth sauce.
- 4. Finish with Basil: Remove from heat and stir in fresh basil. Taste and adjust seasoning as needed. Serve immediately over your favorite pasta, or store for later use.
