Ingredients
- 1.5 lbs cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- Cooked spaghetti, for serving
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Mince garlic.
- 2. Sauté Garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, pepper, and optional sugar to the skillet. Stir, cover, and simmer for 15-20 minutes, stirring occasionally, until tomatoes are soft and bursting.
- 4. Mash and Finish: Uncover and gently mash about two-thirds of the tomatoes with the back of a spoon or potato masher. Simmer uncovered for another 5-10 minutes to thicken. Stir in fresh basil. Taste and adjust seasonings as needed. Serve hot over cooked spaghetti.
