Ingredients

  • 1 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 small red onion, finely chopped
  • 2 pints (about 4 cups) cherry or grape tomatoes
  • 1/2 tsp kosher salt, or to taste
  • 1/4 tsp freshly ground black pepper, or to taste
  • Pinch of sugar (optional, to balance acidity)
  • Pinch of red pepper flakes (optional, for heat)
  • 1/2 cup fresh basil leaves, chopped or torn
  • Cooked spaghetti or your favorite pasta, for serving
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Sauté Aromatics: In a large skillet or saucepan, heat olive oil over medium heat. Add minced garlic and chopped onion. Sauté for 3-5 minutes until softened and fragrant, taking care not to brown the garlic.
  • Add Tomatoes & Simmer: Add cherry tomatoes, salt, black pepper, and optional sugar/red pepper flakes. Stir to coat. Cover and simmer for 15-20 minutes, stirring occasionally, until tomatoes burst and soften substantially.
  • Mash & Thicken: Remove lid. Using the back of a spoon or potato masher, gently mash some of the tomatoes against the side of the pan to create a rustic consistency and help thicken the sauce. Continue to simmer uncovered for another 5-10 minutes if you prefer a thicker sauce.
  • Finish with Fresh Herbs: Remove from heat. Stir in the fresh basil leaves. Taste and adjust seasoning as needed. Serve immediately over cooked pasta with grated Parmesan cheese.
