Ingredients

  • 2 pints (about 4 cups) cherry or grape tomatoes, halved
  • 46 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil leaves, roughly chopped
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground, or to taste
  • Optional: Pinch of red pepper flakes
  • Optional: 1/4 cup dry white wine

Instructions

  • Prep Ingredients: Wash and halve cherry tomatoes. Mince garlic cloves.
  • Sauté Aromatics: Heat olive oil in a wide skillet over medium heat. Add minced garlic (and red pepper flakes, if using) and sauté for 1-2 minutes until fragrant and lightly golden.
  • Cook Tomatoes: Add halved tomatoes to the skillet, increase heat to medium-high. Cook for 8-12 minutes, stirring occasionally and gently mashing with a spoon, until tomatoes burst and juices release.
  • Simmer Sauce: Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly. Season with salt and pepper to taste.
  • Finish & Serve: Remove from heat, stir in fresh basil. Toss immediately with cooked spaghetti and a splash of reserved pasta water for optimal consistency.
