Description
This easy cherry tomato spaghetti sauce bursts with fresh, sweet flavors, thanks to roasted tomatoes and garlic. It’s a quick, vibrant meal perfect for any night of the week.
Ingredients
- 2 pints (about 4 cups) cherry tomatoes
- 4–5 cloves garlic, roughly chopped
- 1/4 cup extra virgin olive oil, plus more for cooking
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Salt and freshly ground black pepper, to taste
- 12 oz spaghetti or preferred pasta
- Parmesan cheese, for serving
Instructions
- 1. Roast Tomatoes & Garlic: Preheat oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes and chopped garlic with 1/4 cup olive oil, salt, and pepper. Roast for 20-25 minutes until burst and caramelized.
- 2. Sauté Aromatics (Optional): In a large skillet or pot, heat a tablespoon of olive oil. If desired, sauté a finely minced fresh garlic clove for 1 minute until fragrant.
- 3. Simmer Sauce: Transfer roasted tomatoes and garlic to the skillet. Gently crush some of the tomatoes with a spoon. Add a splash of pasta water if needed. Simmer for 5-7 minutes to meld flavors.
- 4. Cook & Toss Pasta: Cook spaghetti according to package directions in salted water. Reserve 1 cup pasta water, then drain pasta. Add pasta and fresh basil to the sauce. Toss, adding reserved pasta water as needed, until sauce coats pasta.
- 5. Serve: Serve immediately with a generous sprinkle of fresh Parmesan cheese.
