Description
This vibrant cherry tomato spaghetti sauce bursts with fresh, sweet tomato flavor and comes together in less than 30 minutes. It’s truly a weeknight lifesaver for any pasta lover.
Ingredients
- 1 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/4 – 1/2 tsp red pepper flakes (optional, adjust to taste)
- 2 pints (about 4 cups) cherry tomatoes, whole
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, freshly ground, or to taste
- 1/4 cup fresh basil leaves, chopped
- Optional: Freshly grated Parmesan cheese for serving
Instructions
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
- Add the whole cherry tomatoes, salt, and black pepper to the skillet. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally. The tomatoes will soften and begin to burst, releasing their juices and forming a rustic sauce. You can gently press some tomatoes with the back of your spoon to help them break down.
- Once most of the tomatoes have burst and the sauce has slightly thickened, remove from heat. Stir in the fresh chopped basil.
- Taste and adjust seasonings as needed, adding more salt, pepper, or a drizzle of olive oil if desired.
- Serve immediately over your favorite hot pasta, garnished with fresh Parmesan cheese.
