Ingredients

  • 2 lbs cherry or grape tomatoes
  • 1/4 cup extra virgin olive oil
  • 46 cloves garlic, thinly sliced
  • 1/21 tsp red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, chopped (plus more for garnish)
  • Salt and freshly ground black pepper, to taste
  • 1 lb spaghetti or your favorite pasta

Instructions

  • Prep Ingredients: Wash tomatoes, slice garlic, chop basil.
  • Sauté Aromatics: Heat olive oil in a large skillet. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
  • Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the pan. Cover and simmer for 10-15 minutes, stirring until tomatoes burst.
  • Mash for Texture: Gently mash some of the burst tomatoes. Cook uncovered for another 5-10 minutes to thicken the sauce.
  • Finish with Herbs: Remove from heat, stir in fresh basil. Taste and adjust seasonings. Serve immediately with cooked pasta.
