Ingredients
- 2 lbs cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, thinly sliced
- 1/2 – 1 tsp red pepper flakes (optional)
- 1/2 cup fresh basil leaves, chopped (plus more for garnish)
- Salt and freshly ground black pepper, to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- Prep Ingredients: Wash tomatoes, slice garlic, chop basil.
- Sauté Aromatics: Heat olive oil in a large skillet. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the pan. Cover and simmer for 10-15 minutes, stirring until tomatoes burst.
- Mash for Texture: Gently mash some of the burst tomatoes. Cook uncovered for another 5-10 minutes to thicken the sauce.
- Finish with Herbs: Remove from heat, stir in fresh basil. Taste and adjust seasonings. Serve immediately with cooked pasta.
