Ingredients

  • 2 pints (about 4 cups) cherry tomatoes
  • 34 cloves garlic, minced or thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup fresh basil leaves, roughly torn or whole
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Optional: 1/4 teaspoon red pepper flakes (for heat)
  • Optional: Drizzle of balsamic glaze (for depth)

Instructions

  • 1. Prep Ingredients: Wash cherry tomatoes. Halve larger ones. Mince garlic. Tear basil.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using). Sauté for 1 minute until fragrant.
  • 3. Cook Tomatoes: Add cherry tomatoes to the pan. Season with salt and pepper. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally. Mash tomatoes with a spoon to help them burst and release juices.
  • 4. Simmer: Reduce heat to low and simmer for 5-10 minutes, allowing flavors to meld and sauce to thicken slightly. Taste and adjust seasoning as needed.
  • 5. Finish: Remove from heat. Stir in fresh basil. Drizzle with balsamic glaze (if using). Serve immediately with your favorite pasta.
