Ingredients
- 1.5 lbs (about 4 cups) cherry or grape tomatoes, halved if large
- 3–4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 – 1 tsp red pepper flakes (or to taste)
- 1/4 cup fresh basil, chopped + more for garnish
- 1 tbsp fresh oregano, chopped (optional)
- Salt and freshly cracked black pepper to taste
- Optional: 1 tsp balsamic vinegar
- Optional: 1 tbsp heavy cream or unsalted butter
- 12 oz spaghetti or your favorite pasta
Instructions
- 1. Prepare Ingredients: Halve cherry tomatoes. Finely mince garlic. Cook spaghetti according to package directions, reserving 1/2 cup pasta water.
- 2. Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant; do not burn.
- 3. Cook Tomatoes: Add halved tomatoes to the skillet. Season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, for 8-12 minutes until tomatoes burst and soften.
- 4. Mash and Simmer: Use a wooden spoon or potato masher to gently crush some of the tomatoes. Simmer for another 5-7 minutes, allowing the sauce to thicken slightly.
- 5. Finish Sauce: Remove from heat. Stir in fresh basil, oregano (if using), optional balsamic vinegar, and optional cream/butter. Adjust seasoning to taste.
- 6. Serve: Toss hot sauce with cooked spaghetti, adding a splash of reserved pasta water if needed to loosen the sauce. Garnish with fresh basil.
