Description
An incredibly easy and flavorful spaghetti sauce made from roasted cherry tomatoes and garlic. Perfect for a quick weeknight meal with deep, rich flavors.
Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, unpeeled
- 1/4 cup extra virgin olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil leaves, torn
- 1 tablespoon fresh oregano, chopped (or 1 tsp dried)
- 1 teaspoon balsamic glaze (optional)
Instructions
- 1. Prep Tomatoes and Garlic: Preheat oven to 400°F (200°C). Arrange tomatoes and unpeeled garlic cloves on a baking sheet. Drizzle with olive oil and season with salt, pepper, and red pepper flakes. Toss to coat.
- 2. Roast for Sweetness: Roast for 25-35 minutes, or until tomatoes burst and garlic is soft and golden.
- 3. Blend or Mash: Squeeze roasted garlic out of skins. For chunky sauce, mash tomatoes and garlic with a fork. For smoother sauce, blend in a food processor until desired consistency.
- 4. Simmer and Season: Transfer sauce to a saucepan. Stir in fresh basil, oregano, and balsamic glaze (if using). Simmer for 5-10 minutes. Taste and adjust seasonings. Serve immediately with your favorite pasta.
