Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly torn
- Salt to taste
- Freshly ground black pepper to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- Rinse tomatoes and pat dry. Slice garlic.
- Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
- Add cherry tomatoes to the skillet. Season generously with salt and pepper. Cook over medium-high heat for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
- Using the back of a wooden spoon or a potato masher, gently mash any remaining whole tomatoes. Reduce heat to low and simmer for 5-10 minutes.
- Remove from heat. Stir in torn fresh basil leaves.
- Serve immediately over cooked spaghetti or your choice of pasta.
