Ingredients

  • 2 pints (about 4 cups) cherry or grape tomatoes
  • 45 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, roughly torn
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 lb spaghetti or your favorite pasta

Instructions

  • Rinse tomatoes and pat dry. Slice garlic.
  • Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
  • Add cherry tomatoes to the skillet. Season generously with salt and pepper. Cook over medium-high heat for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
  • Using the back of a wooden spoon or a potato masher, gently mash any remaining whole tomatoes. Reduce heat to low and simmer for 5-10 minutes.
  • Remove from heat. Stir in torn fresh basil leaves.
  • Serve immediately over cooked spaghetti or your choice of pasta.
