Ingredients

  • 1.5 lbs (about 6 cups) cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/21 teaspoon red pepper flakes (optional, to taste)
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper to taste
  • Optional: Pinch of sugar, splash of white wine, other herbs

Instructions

  • 1. Prep Ingredients: Halve cherry tomatoes and mince garlic.
  • 2. Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
  • 3. Cook Tomatoes: Add halved cherry tomatoes to the skillet, stir to coat. Cover and cook over medium-low heat for 10-15 minutes, until tomatoes soften and burst, stirring occasionally.
  • 4. Simmer Sauce: Uncover, reduce heat to low, and simmer for another 15-20 minutes until the sauce thickens and flavors meld. Mash any remaining large tomato pieces if desired.
  • 5. Finish & Serve: Remove from heat, stir in fresh basil, and season with salt and pepper to taste. Serve immediately over your favorite pasta.
