A vibrant, homemade cherry tomato spaghetti sauce bursting with sweet, tangy flavor. Perfect for a quick weeknight meal, this sauce is simple to make and incredibly satisfying.
Ingredients
- 1.5 lbs (about 6 cups) cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 – 1 teaspoon red pepper flakes (optional, to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- Optional: Pinch of sugar, splash of white wine, other herbs
Instructions
- 1. Prep Ingredients: Halve cherry tomatoes and mince garlic.
- 2. Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- 3. Cook Tomatoes: Add halved cherry tomatoes to the skillet, stir to coat. Cover and cook over medium-low heat for 10-15 minutes, until tomatoes soften and burst, stirring occasionally.
- 4. Simmer Sauce: Uncover, reduce heat to low, and simmer for another 15-20 minutes until the sauce thickens and flavors meld. Mash any remaining large tomato pieces if desired.
- 5. Finish & Serve: Remove from heat, stir in fresh basil, and season with salt and pepper to taste. Serve immediately over your favorite pasta.
