Description
An incredibly easy and flavorful cherry tomato spaghetti sauce that bursts with natural sweetness. This simple recipe comes together quickly for a perfect weeknight meal.
Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3 tablespoons extra virgin olive oil
- 3–4 cloves garlic, minced
- ½ teaspoon red pepper flakes (or to taste)
- ½ cup fresh basil leaves, roughly chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 12 oz spaghetti or your favorite pasta
- Optional: Freshly grated Parmesan cheese for serving
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. If large, halve them. Mince garlic and set aside basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add cherry tomatoes to the skillet, stir to coat. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes.
- 4. Burst & Season: Uncover and gently crush any unburst tomatoes with a spoon or potato masher. Stir in salt and black pepper; taste and adjust seasoning.
- 5. Finish with Basil: Remove from heat and stir in fresh basil. Toss with cooked spaghetti and serve immediately with Parmesan if desired.
