A vibrant and incredibly flavorful cherry tomato spaghetti sauce made by slowly roasting tomatoes and garlic to sweet perfection. This easy recipe offers maximum impact with minimal ingredients.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil, plus more for drizzling
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup water or vegetable broth
- 1/2 cup fresh basil leaves, roughly chopped or torn
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine cherry tomatoes, sliced garlic, and red pepper flakes (if using).
- Drizzle generously with olive oil, then season with salt and black pepper. Toss to coat evenly.
- Roast for 25-30 minutes, or until tomatoes are softened, burst, and slightly caramelized.
- Transfer roasted tomatoes and garlic to a medium saucepan. Add water or broth.
- Bring to a gentle simmer over medium-low heat. Gently smash some of the tomatoes with a potato masher or spoon to your desired consistency. Simmer for 5-10 minutes.
- Remove from heat and stir in fresh basil. Taste and adjust seasoning as needed.
- Serve warm over your favorite pasta.
