Description
This simple yet incredibly flavorful cherry tomato spaghetti sauce is made with sweet, roasted cherry tomatoes and garlic. It’s a weeknight hero, bursting with fresh, garden-inspired taste year-round.
Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 3–4 tbsp extra virgin olive oil
- 1/2 tsp salt (plus more to taste)
- 1/4 tsp black pepper, freshly ground (plus more to taste)
- 1/4 cup fresh basil, chopped
- Parmesan cheese, for serving
- Optional: pinch of red pepper flakes for heat
Instructions
- Preheat oven to 400°F (200°C). On a large baking sheet, spread tomatoes and peeled garlic. Drizzle with olive oil, salt, and pepper. Toss to coat.
- Roast for 25-35 minutes, or until tomatoes are burst, softened, and lightly caramelized.
- Transfer roasted tomatoes and garlic to a medium saucepan. Gently crush tomatoes with the back of a spoon or potato masher.
- Bring to a gentle simmer over medium-low heat. Cook for 10-15 minutes, stirring occasionally, until flavors meld and sauce thickens slightly to your desired consistency.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning as needed.
- Serve hot over cooked spaghetti or your favorite pasta, garnished with Parmesan cheese.
