Ingredients
- 1.5 lbs (approx. 4 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly torn
- Salt and freshly ground black pepper, to taste
Instructions
- 1. Wash tomatoes. Mince garlic.
- 2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
- 3. Add cherry tomatoes and dried oregano to the skillet. Bring to a gentle simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, stirring occasionally, until tomatoes burst and form a sauce.
- 4. Remove from heat. Stir in fresh basil. Season generously with salt and pepper. Serve immediately over your favorite pasta.
