Ingredients
- 2 lbs (about 4 cups) fresh cherry or grape tomatoes, halved
- 4 cloves garlic, minced or thinly sliced
- 1/4 cup extra virgin olive oil (quality matters!)
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 – 1 teaspoon red pepper flakes (optional, to taste)
- 1 teaspoon sea salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- Optional: 1/4 cup dry white wine
Instructions
- 1. Prep Ingredients: Halve cherry tomatoes, mince garlic, and chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium-high. Add garlic and red pepper flakes; sauté for 30-60 seconds until fragrant. Do not burn.
- 3. Add Tomatoes & Simmer: Add halved tomatoes to the skillet. Cook on high heat for 5-7 minutes, stirring occasionally, until tomatoes blister and burst. Reduce heat to medium-low, cover, and simmer for 10-15 minutes until sauce thickens.
- 4. Finish & Season: Remove lid. Lightly mash some tomatoes with a spoon if desired. Stir in fresh basil. Season generously with salt and black pepper to taste.
- 5. Optional Blending: For a smoother sauce, blend half or all of the sauce using an immersion blender or by carefully transferring to a standard blender.
