Ingredients
- 1.5 lbs (about 4 cups) cherry or grape tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil, chopped
- 1/2 – 1 teaspoon red pepper flakes (optional)
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- Optional: 1 small Parmesan rind
- Optional: 1/4 cup dry white wine
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add cherry tomatoes to the pan. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until tomatoes burst and soften.
- Gently crush tomatoes with a spoon or potato masher to your desired consistency. If using, add Parmesan rind or white wine during simmering.
- Season with salt, black pepper, and red pepper flakes (if using). Stir in fresh basil just before serving.
- For a smoother sauce, blend carefully with an immersion blender or in a regular blender until desired consistency.
