Ingredients

  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil, chopped
  • 1/21 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional: 1 small Parmesan rind
  • Optional: 1/4 cup dry white wine

Instructions

  • Heat olive oil in a large skillet or pot over medium heat.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Add cherry tomatoes to the pan. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until tomatoes burst and soften.
  • Gently crush tomatoes with a spoon or potato masher to your desired consistency. If using, add Parmesan rind or white wine during simmering.
  • Season with salt, black pepper, and red pepper flakes (if using). Stir in fresh basil just before serving.
