Ingredients
- 2 lbs (approx. 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1 tsp sea salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/4 tsp red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, roughly torn or chopped
- 1 small sprig fresh oregano (or 1/2 tsp dried)
Instructions
- Preheat oven to 400°F (200°C).
- Spread cherry tomatoes and sliced garlic on a large baking sheet. Drizzle with olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat.
- Roast for 25-35 minutes, or until tomatoes are soft, blistered, and some have burst.
- Transfer roasted tomatoes, garlic, and all pan juices to a medium saucepan. Add fresh basil and oregano.
- Bring to a gentle simmer over medium-low heat. Cook for 15-20 minutes, stirring occasionally and gently crushing tomatoes with the back of a spoon.
- Remove oregano sprig. For a smoother sauce, use an immersion blender or carefully transfer to a regular blender to desired consistency.
- Taste and adjust seasoning as needed. Serve hot with your favorite pasta or other dishes.
