This simple yet incredibly flavorful cherry tomato spaghetti sauce is perfect for a quick weeknight dinner. It highlights the natural sweetness of cherry tomatoes for a fresh and vibrant pasta dish.
Ingredients
- 1 tablespoon extra virgin olive oil
- 4 cloves garlic, minced
- 1.5 lbs (about 6 cups) cherry tomatoes, halved or left whole
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup fresh basil leaves, torn or chopped
- Optional: pinch of red pepper flakes, splash of pasta water
Instructions
- Sauté Garlic: Heat olive oil in a large skillet or wide pot over medium-low heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown.
- Add Tomatoes: Add cherry tomatoes, salt, and pepper to the pan. Increase heat to medium and cook, stirring occasionally, for 8-12 minutes until most tomatoes have burst and softened. Gently press some with a spoon to release juices.
- Simmer Sauce: Reduce heat to low and simmer for another 5-10 minutes, allowing flavors to meld. If the sauce becomes too thick, add a splash of pasta water.
- Finish with Basil: Remove from heat and stir in fresh basil. Taste and adjust seasonings as needed. Toss with your favorite cooked pasta and serve immediately.
