This incredibly fresh and flavorful cherry tomato spaghetti sauce comes together quickly, bursting with sweet, rustic charm. It’s the perfect weeknight meal that tastes like summer in every bite.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, some halved
- 3 tablespoons extra virgin olive oil
- 1 small red onion, finely diced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (or to taste)
- 1/2 cup fresh basil leaves, chopped
- Salt and freshly ground black pepper to taste
- Optional: 1-2 teaspoons balsamic glaze or good quality balsamic vinegar
- For serving: Cooked spaghetti and grated Parmesan cheese
Instructions
- 1. Prepare Ingredients: Wash tomatoes; halve any larger ones. Mince garlic and dice onion. Have all other ingredients measured and ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add diced red onion and sauté for 3-5 minutes until softened. Add minced garlic and red pepper flakes; cook for 1 minute until fragrant.
- 3. Cook Tomatoes: Add cherry tomatoes and dried oregano to the skillet. Season with salt and pepper. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally, until tomatoes burst. Gently mash some tomatoes with a spoon or potato masher to create a sauce. Reduce heat to low and simmer for 5-7 minutes.
- 4. Finish and Serve: Remove from heat. Stir in chopped fresh basil. Taste and adjust seasonings (add balsamic glaze if desired for brightness). Serve immediately over cooked spaghetti with grated Parmesan cheese.
