Ingredients

  • 2 lbs (approx. 900g) cherry tomatoes, halved if large
  • 1 small yellow onion, diced
  • 4–5 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried oregano or Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp tomato paste
  • 1/4 cup water or vegetable broth
  • 2 tbsp fresh basil, chopped (for garnish)
  • 1 tsp balsamic vinegar (optional, for acidity balance)

Instructions

  • 1. Prep & Roast Tomatoes: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, diced onion, and garlic. Drizzle with olive oil, sprinkle with oregano, red pepper flakes (if using), salt, and pepper. Toss to coat. Roast for 25-35 minutes, until tomatoes are burst and caramelized.
  • 2. Simmer Sauce: Transfer roasted mixture to a saucepan. Stir in tomato paste and 1/4 cup water or broth. Bring to a gentle simmer over medium-low heat and cook for 10-15 minutes, stirring occasionally, until flavors meld. Add balsamic vinegar, if using.
  • 3. Blend & Season: Remove from heat. Carefully transfer to a blender or use an immersion blender to blend to your desired consistency (smooth or slightly chunky). Stir in fresh basil. Taste and adjust salt and pepper as needed.
  • 4. Serve: Serve warm over your favorite pasta, garnished with extra fresh basil and Parmesan cheese.
