Description
This delightful cherry tomato spaghetti sauce is bursting with fresh, vibrant flavors and comes together quickly for a perfect weeknight meal. It’s a true taste of summer, anytime you want it.
Ingredients
- 1.5 lbs (approx. 4 cups) cherry or grape tomatoes, halved
- 3–4 cloves garlic, thinly sliced or lightly crushed
- 1/4 cup extra virgin olive oil
- 1/2 tsp kosher salt, or to taste
- 1/4 tsp freshly ground black pepper, or to taste
- Pinch of sugar (optional, but recommended)
- 1/4 cup fresh basil leaves, roughly chopped
- 1 tbsp fresh oregano leaves, chopped (or a sprig or two)
- Optional: Small sprig of fresh thyme
Instructions
- 1. Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium-low heat. Add sliced garlic and cook gently for 2-3 minutes until fragrant, being careful not to brown.
- 2. Add Tomatoes and Season: Increase heat to medium. Add halved cherry tomatoes, salt, pepper, and optional sugar. Stir to combine.
- 3. Simmer: Bring to a gentle simmer, then reduce heat to low. Partially cover and simmer for 20-30 minutes, stirring occasionally and gently mashing some tomatoes to release juices.
- 4. Finish: Stir in fresh basil, oregano, and thyme during the last 5 minutes of cooking. Taste and adjust seasoning. Serve hot with your favorite pasta.
