Description
This quick and easy cherry tomato spaghetti sauce delivers incredible flavor with minimal effort. Sweet, burst cherry tomatoes combine with garlic and basil for a vibrant, irresistible pasta topping.
Ingredients
- 2 Pints (about 4 cups) cherry or grape tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon freshly ground black pepper, or to taste
- Pasta of choice, for serving
Instructions
- In a large skillet or Dutch oven, heat olive oil over medium heat.
- Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant. Do not brown.
- Add halved cherry tomatoes, salt, and pepper. Increase heat to medium-high.
- Cook, stirring occasionally, for 8-10 minutes until tomatoes burst and release their juices.
- Gently smash some of the tomatoes with the back of a spoon or a potato masher to thicken the sauce.
- Reduce heat to low and simmer for another 10-15 minutes, allowing flavors to meld.
- Remove from heat and stir in fresh basil. Taste and adjust seasoning as needed.
- Serve immediately over your favorite pasta.
